Since it took me a while to find a solution, decided to share it with others that might want to use GeForce Experience for Genshin Impact.
To be able to record, take screenshots, record highlights, you have to activate "Desktop" record in GeForce Experience.
What this will do, is record your entire desktop. This means that you can run the game Fullscreen window mode and simply record / take screenshots of your game.
How to activate desktop recording:
Press Alt + N to open the GE overlay.
Click on the "Record" button.
Genshin Impact is now supported by Nvidia Game Filter.

Which settings do you have on?
When i go into NVidia control panel I dont see those settings, XD.
Abit late, but wanna ask do you use RTX or GTX series?
I just wish I could run the game @ 144hz :(

It just looks more saturated
There is a limit to what you can see through a picture, but in-game everything is significantly more clear and less blurry, especially in the distance. Plus it is something you can tweak further to perfectly fit your taste.
Nice !! in AMD we have something similar, we can change vibrance, temperature, contrast, brightness, tint color and of course Sharpening.
Genshin Impact on GFN
Are there any news on Genshin Impact being added to GeforceNOW on release? The game is free, so it would be great to have this wonderful title playable in teh cloud.

It will never come to any VM service it uses Kernel Level anti-cheat (same as valorant) so requires higher level access than a VM has, it also remains running even when the game is closed. Not sure why a single player rpg with no pvp needs an anti-cheat of this level with full access to monitor what your doing even when the game is not running.

Дрова давно обновляли? Просто поддержка оверлэя в Геншине появилась не так давно.
Михаил, Недавно они сами по себе обновлялись, как раз таки после этого и начались проблемы в других играх
Если в других играх тоже не открывается оверлей, то, думаю, дело не в игре. В таком случае попробуй полностью удалить софт и скачать новый на оф. сайте.
Если проблема осталась, то стоит полазить в настройках - проверь, включена ли функция оверлея вообще, ну или установить драйвер 388 (за нвидиа софт не шарю)
